Creamy Chicken and Vegetable Soup

Ingredients:

  • 2 boneless, skinless chicken breasts, cooked (you might like to do this in the oven or frying pan) and shredded
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 4 cups low-sodium chicken stock or broth
  • 1 cup milk (you can use breast milk or formula if preferred for your baby)
  • 1 cup frozen peas
  • 1 cup sweet corn kernels
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Add the minced garlic and cook for an additional minute.
  3. Pour in the chicken broth or stock and bring it to a boil. Reduce the heat and let it simmer for about 10 minutes.
  4. Add the shredded chicken, frozen peas, sweet corn, and dried thyme.
  5. Simmer for another 10 minutes, allowing the flavours to blend.
  6. Pour in the milk and stir well. Continue cooking for an additional 5 minutes until the soup is heated through.
  7. Remove from heat and let it cool slightly. If needed, use a blender to puree the soup to a smoother consistency suitable for babies.
  8. Serve the creamy chicken and vegetable soup warm in baby-friendly bowls or cups. You can also add some cooked rice or small pasta shapes to make it heartier for older children or adults.
  9. Add salt and pepper to taste for the rest of the family.

Note: Always check the temperature of our Creamy Chicken and Vegetable Soup before serving it to your baby to ensure it’s not too hot. Adjust the seasoning and texture according to your baby’s needs and preferences.
